This organic Catarratto — one of Sicily’s oldest and most expressive white grapes — is grown on clay soils near Palermo, which help retain freshness in the heat. Made by the Amato family, now into their fourth generation, this is a low-sulphur, vegan wine crafted entirely in steel to keep its bright fruit and savoury finish intact.
